1 med. Cabbage (shredded)—or you can get the bagged shredded cabbage in the produce section

1/2 green pepper, thinly sliced

1/2 red onion, chopped

1/2 minced jalapeno

1 tsp salt

3/4 cup vinegar

1/2 cup oil (not olive oil)

Bring sugar, salt, vinegar, and oil to a boil.  Pour over cabbage and veggies and mix well.  Season with salt and course black pepper. Refrigerate a few hours or overnight.
