1 pkg bowtie or other pasta, cooked
1 medium zucchini, sliced
1 medium yellow squash, sliced
1 large carrot, shredded
1 jar baby corn, drained and rinsed
1/2 red onion, thinly sliced
1 cucumber, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 pint cherry tomatoes
1/2 cup chopped cilantro or parsley
grated Parmesan or Romano cheese

Combine with dressing:
1/4 cup champaign vinegar
1-2 clove garlic, minced
1 tsp Dijon mustard
1 TBSP chopped fresh oregano
1 TBSP chopped fresh cilantro
3/4 cup extra virgin olive oil
salt and pepper to taste
