4 bell peppers, seeded, ribs removed
1 pound hamburger (though next time i want to try venison or ground chicken – for vegan, i’d use hummus, or homemade unflavored refried beans – but THEN, i would include a glug of olive oil and broccoli, corn and other veggies)
1 small onion, diced
1 small tomato, diced
1 large egg
About 2 cups cooked rice ( i used a package of uncle ben’s 90 second ready rice- the quinoa & brown rice w/garlic kind)
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon black pepper
1/4 teaspoon garam masala
1/4 teaspoon cumin
1/2 teaspoon ground black pepper
2 fresh serrano peppers, seeded and minced
splash worcestershire

Preheat the oven to 350˚. Mix all the ingredients (except bell peppers, of course) in a bowl until well-blended. Fill peppers with mixture, dividing equally and mounding slightly. Arrange in a greased 13 X 9 baking dish. Brush the outside of your peppers all over with olive oil. 

Bake peppers uncovered until tops are browned and thermometer inserted into filling registers 165˚ – about an hour. Transfer to serving platter. ENJOY!
