1/2 cup sugar
1/2 cup good Port
1/2 tsp freshly ground black pepper
1 bay leaf (preferably fresh)

In a large saucepan, combine the sugar, Port, pepper and bay leaf and bring to a boil.  Cook over medium heat, stirring occasionally, until thickened enough to coat the back of a spoon, about 5 minutes.  Discard bay leaf and let cool.  Serve  w/ whipped goat cheese (whip small package of goat cheese with 1/4 cup toasted almonds and 2 TBPS olive oil until smooth and fluffy), good crackers or crostini and fruit.
